hi everyone! wow.. thank you for all of your comments and "votes" and for the mexican hot chocolate recipe. :) i am looking forward to trying it. i've been making mr. larson pumpkin spice chai and i am thinking that a big pot of chili is in order for the weekend! :) brittany and i did a huge pile of gocco ghost prints last night and recipe card books. so much fun. and i made a new autumn playlist in iTunes and started a new painting.... pretty much the perfect evening! as a mini celebration that i have a new assistant i wanted to do a giveaway! My favorite thing in fall is caramel apple cider. You take some apple cider, heat it up, pour some caramel sauce in (the ice cream topping kind works great) to the taste you like add some whipped cream on top. Pure heaven. It is fall in a mug. :-)

Pumpkin Chili
We make it vegitarian around here. I just use cans of organic beans;(chili, pinto, garbonzo, black), chopped onion, chopped garlic cloves, celery, carrots, cauliflower, chili seasoning, and two (secret) weapons...cinnamon and a can of organic pureed pumpkin. Served with corn bread and honey butter...mmmm.. makes me long to move out of FLorida :D

Acorn Cookies! My favorite fall recipe was just recently shared with me by my dear friend Kambria.
This recipe requires no cooking...just assembling.
Take a hershey kiss, mini nilla wafers & chocolate frosting (just like Duncan Hines or something).
Put a little frosting on the Mini Nilla Wafer, stick it flat side down to the flat side of the hershey kiss. Take a knife or tooth pick with a little frosting and dab it on top of the Nilla Wafer for a stem...and Voila! You have an acorn cookie.
**Set them out for a little while before piling them in a bowl to allow the frosting to set up. :)

Velvet Chocolate Cheesecake
38 OREO Chocolate sandwich cookies, divided
5 T. butter or margarine, melted
5 oz. semisweet chocolate, divided (chocolate chips work fine)
1 8 oz. package of cream cheese, softened
½ c. plus 2 T. sugar, divided
1 ½ c. sour cream, divided
2 eggs
1 t. vanilla extract.
1. Finely crush 24 cookies; mix crushed cookies and butter in bowl. Press firmly on bottom of 9-inch springform pan. Stand remaining 14 cookies around edge of pan, pressing firmly into crumb mixture. Set aside.
2. Melt 4 oz. chocolate in small saucepan over low heat; set aside.
3. Beat cream cheese and ½ cup sugar with electric mixer at medium speed until creamy. Beat in 1.2 cup sour cream, eggs and vanilla until smooth. Blend in melted chocolate. Pour into prepared crust.
4. Bake at 325 for 35 to 40 minutes or until cheesecake is slightly pufed and center is set. Blend remaining 1 c. sour cream and two T. sugar; spread over cheesecake. Bake 5 minutes more. Cool to room temperature.
5. Melt remaining 1 oz. chocolate; drizzle over cheesecake. Refrigerate at least 4 hours.
Makes 12 to 14 servings.

Oreo Cheesecake
1 package OREO Chocolate sandwich cookies, divided
¼ c. butter or margarine, melted
2 (8 oz. each) pkgs. cream cheese, softened
¾ c. sugar
3 eggs
1 (16 oz.) container of sour cream
1 t. vanilla extract
1. Reserve 6 cookies for garnish. Finely crush half the remaining cookies. Coarsely chop remaining half of cookies; set aside.
2. Mix finely crushed cookies and butter in bowl. Press firmly on bottom and 1 ½ inches up side of 9-inch springform pan; set aside.
3. Beat cream cheese and sugar in large bowl with electric mixer at medium speed until creamy. Blend in eggs, sour cream and vanilla; fold in coarsely chopped cookies. Spread mixture into prepared crust.
4. Bake at 350 for 50 to 60 minutes or until set. Cool at room temperature for 1 hour. Refrigerate at least 4 hours.
5. Remove side of pan. Halve reserved cookies. Garnish cheesecake with cookie halves.
Makes 12 servings.

oh fun! ok, i'm having a hard time picking a recipe ... BUT, i'm gonna stick with pumpkin bread because it's my absolute favorite treat (and i love it with chocolate chips, like this recipe calls for ... sooooo yummy)
4 eggs
2 1/2 c. sugar
1/3 c. water
2 c. canned pumpkin
1 c. chocolate chips
3 1/2 c. flour
2 tbsp. soda
1 1/2 tsp. cinnamon
Beat eggs and sugar together. Add oil, water and pumpkin to egg mixture and mix flour, soda, salt and cinnamon together and add to pumpkin mixture. Stir in as many chocolate chips as you like (6 to 12 ounces). Pour in 2 or 3 greased bread pans and bake at 300 degrees for 1 1/2 hours.
i also love love love tomato soup with a grilled cheese sandwich, nothing beats melty cheese, crispy bread & creamy tomato soup.
now i am so hungry!

My favorite fall recipe (although I admit it's not very fall-like) is the Oreo Cheesecake. For some odd reason, oreos remind me of Halloween... It's great sharing it with friends around a table while you sip a steaming cup of hot chocolate. Plus, who doesn't like cheesecake!
Oreo Cheesecake
Prep Time: 20 min
Total Time: 5 hr 5 min
Makes:16 servings, one piece each
What You Need
1 pkg. (1 lb. 2 oz.) Oreo cookies, divided 1/4 cup
(1/2 stick) butter or margarine, melted
4 pkg. (8 oz. each) cream cheese, softened
1 cup sugar
1 tsp. vanilla
1 cup sour cream
4 eggs
Preheat oven to 325°F. Line 13x9-inch baking pan with foil, with ends of foil extending over sides of pan. Place 30 of the cookies in food processor; cover. Process 30 to 45 sec. or until finely ground. Add butter; mix well. Press firmly onto bottom of prepared pan.
Beat cream cheese, sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Add sour cream; mix well. Add eggs, one at a time, beating just until blended after each addition. Chop remaining cookies. Gently stir 1-1/2 cups of the chopped cookies into cream cheese batter. Pour over crust; sprinkle with the remaining chopped cookies.
Bake 45 min. or until center is almost set. Cool. Refrigerate 4 hours or overnight. Lift cheesecake from pan, using foil handles. Cut into 16 pieces to serve. Store leftover cheesecake in refrigerator.

Tortilla Soup---Yuuuummmm!
2-3 cooked chicken breasts
1 can diced tomatoes
1 can mild enchilada sauce
1/2 cup chopped onion
1 can green chilies
2-3 cups water
1 can chicken broth
1 tsp. cumin1 can sliced olives
1 garlic clove, diced
1 tsp. chili powder
1 tsp. salt
1 pkg. frozen corn
1 tbsp. dried cilantro
1/2-1 cup heavy cream
In crockpot, combine chicken, tomatoes, sauce, onion, chilies, garlic. Add the water, chicken broth, cumin, chili powder, salt. Stir in corn and cilantro. Cover and cook on low 6-8 hours or on high for 3-4 hours. Add cream to taste about 15 minutes before serving. Top with tortilla chips, sour cream and/or avocado slices.

My favorite fall recipe is a sort of stew with lamb. Don't have measurements and stuff since I made it myself. This is really good! Here's what you do:
Take som good lamb meat, chop it into big chunks and fry it quickly with chopped onions, garlic and mushrooms in a pan. Pour over vegetable stock, cream, and redwine. Let it simmer for a goooood while (approximately 45 minutes, depending on the size of your meat chunks). When it's done, put in fresh herbs and a little salt and pepper. This is so tasty! Yum!:) And it's great since it practically makes itself while you can enjoy the rest of the wine;)

Wow...my favorite fall recipe has to be apples from the oven. It is soooooo simple but smells like grandma's kitchen... if you know what I mean mmmmmmm.
Here it is:
You take an apple per person
remove the centre and fill the holes with raisins, cinnamom and honey.
Wrap each apple in tinfoil and put them in the oven. (180 C) for half an hour.
Quick, easy and super delicious!
