It feels like Southern Missouri goes from cardigan weather to sweating-in-my-car weather in a matter of days. I adore warm weather so I'm not going to complain, but this sudden change has got me dreaming of icy cold treats. I like making popsicles, mostly to keep myself from eating ice cream every night. Ha! I thought it would be fun to try and create a few flavors this summer that were cocktail inspired. This is my first cocktail inspired popsicle recipe and I must say, I loved them! If you don't have or like strawberries you might substitute raspberries or cherries instead.
Strawberry Cocktail Popsicles, makes 4-5
Needed: 1/2 cup sugar, 1/3 water, 2 1/2 cups strawberries, juice from half a lemon, 1 tablespoon Angostura bitters. *note: bitters do contain alcohol, but only a small amount.
In a small pot combine the sugar and water. Simmer over medium heat and stir until sugar fully dissolves. Remove from heat and allow this to cool as you finely chop up the strawberries. Stir in strawberries, lemon juice and bitters. Taste and add more bitters if you prefer. Pour into Popsicle containers and freeze overnight. There are many different sizes of popsicle containers out there so you may need to adjust the recipe to make the amount you need.Have fun creating your own adult-friendly popsicles this summer! xo. emma
