Rice pudding is one of my favorite snacks! It has been a food obsession of mine for years now. I love how simple it is too; I usually have all the ingredients in my pantry and refrigerator whenever the rice-pudding-craving strikes. The other afternoon I made this quick and easy rice pudding and added roasted strawberries. If you've never made rice pudding before I highly recommend giving it a try!
Easy Rice Pudding, makes 2 servings.
Needed: 2 tablespoons butter, 1/2 cup Arborio rice, 1 1/2 cup milk, 1/2 cup cream (I used half and half), 1/4 cup sugar, 1/2 teaspoon vanilla extract and a generous sprinkle of cinnamon.
In a small pot melt the butter over medium heat. Stir in the dry rice and cook until it appears translucent. Stir in the sugar and cinnamon. In a separate pot combine the milk and cream and simmer over low/medium heat. Pour about 1/3 cup of the warm milk into the rice mixture. Cook and stir until it has nearly all absorbed into the rice. Repeat until you have used all the milk. This will take 20-30 minutes, just keep adding milk and stirring. It'll come together. In the mean time, roast some strawberries. Once you've added all the milk stir in the vanilla extract and serve warm with fresh or roasted fruit. Enjoy! xo. emma

Ooooh! I LOVE rice pudding and will definitely try this recipe. I've actually never roasted fruit before, so might try that as well.

I would have never thought to roast strawberries as a topping!
When I was a kid, my mom always used to eat rice pudding for dessert, and my brother and I would tease her for eating 'old lady soup' instead of what we thought was a legit dessert, like ice cream. Shows what we knew :)

I'm majorly off rice pudding and porridge right now for the texture but it does smack of nostalgia. :) Maybe I just need to make mine thicker and more flavourful.

I love it too as a snack / desert (in Portugal we call it Arroz doce | Sweet Rice). One day I had it has a meal in Germany, but although I love it that was too much. I have to try with the strawberries, normally I have it with cinnammon
