Rice pudding is one of my favorite snacks! It has been a food obsession of mine for years now. I love how simple it is too; I usually have all the ingredients in my pantry and refrigerator whenever the rice-pudding-craving strikes. The other afternoon I made this quick and easy rice pudding and added roasted strawberries. If you've never made rice pudding before I highly recommend giving it a try!
Easy Rice Pudding, makes 2 servings.
Needed: 2 tablespoons butter, 1/2 cup Arborio rice, 1 1/2 cup milk, 1/2 cup cream (I used half and half), 1/4 cup sugar, 1/2 teaspoon vanilla extract and a generous sprinkle of cinnamon.
In a small pot melt the butter over medium heat. Stir in the dry rice and cook until it appears translucent. Stir in the sugar and cinnamon. In a separate pot combine the milk and cream and simmer over low/medium heat. Pour about 1/3 cup of the warm milk into the rice mixture. Cook and stir until it has nearly all absorbed into the rice. Repeat until you have used all the milk. This will take 20-30 minutes, just keep adding milk and stirring. It'll come together. In the mean time, roast some strawberries. Once you've added all the milk stir in the vanilla extract and serve warm with fresh or roasted fruit. Enjoy! xo. emma

Your rice pudding is like our "arroz con leche" ... "milky rice"
When i was a child they made me finish this rice and i hated it, now i keep on hating it, but in this picks seems delicious!

I've never had rice pudding, but it looks delicious. Of course anything with fresh fruit is always delicious and refreshing.

I just tried making this recipe and my rice turned out still crunchy. I used all milk instead of with the cream, but I cooked it over thirty minutes and even added another half-cup of milk. Any suggestions?
